Italian Spicy Quinoa with Peppers & Onions
Italian Spicy Quinoa with Peppers & Onions is a superfood spicy quinoa creation that I made pretty spicy!! This was a perfect recipe to have in my post Ultimate Reset eating plan! Quinoa has so many health benefits and is so filling. Use this as a side dish or main dish.
Italian Spicy Quinoa with Peppers & Onions
- 2 cups of dry quinoa
- 1 tsp Rattle Snake Dust from Texas Select Seasonings (Google it). Or use some other spicy hot seasoning!
- 1 Tbsp Extra Virgin Olive Oil
- 2 red bell peppers (diced)
- 1 yellow onion (diced)
- 2 cloves garlic
- 2 15oz. cans of organic diced tomatoes
- 1 Tbsp of Italian seasoning
Instructions:
Steam/boil Quinoa as indicated on the package directions. Add the Rattle Snake Dust seasoning to the water to absorb into the quinoa. In a skillet, add olive oil, peppers, onion and garlic. Saute onion, peppers and garlic for about 10 minutes. Add 2 cans of organic diced tomatoes. Add in Italian seasoning. Let cook for about 3 minutes. Add cooked spicy quinoa to vegetable mixture, stirring well. Cook 5 minutes and serve. Smiled at the Italian Heat!
