Crustless Pumpkin Pie
- 1 12-oz pkg silken tofu
- 1 cup pumpkin puree
- 1 1-oz box sugar-free, fat-free vanilla instant pudding mix
- 1 tsp pumpkin pie spice
Add all ingredients to a large bowl and blend until smooth. Refrigerate before serving.
Ready in 1 hour – Makes 4 servings, 90 cals per serving
Pumpkin Pie Shakeology Bars
(recipe needs tweaking. Next time I’m following the shake recipe below along with oatmeal)
- 1 scoop Chocolate Shakeology
- 1 scoop chocolate whey protein powder (I’m going
- 1 cup pumpkin
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 cup rolled oats, cooked and cooled
Combine all ingredients well and freeze for at least 90 minutes

- 1 cup rice, soy, almond, or low-fat milk (plain or vanilla)
- 1/2 cup canned pumpkin, unsweetened
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- Ice (optional)
